Elegant Homemade Gravy

Ingredients:
- Drippings from roasted turkey
- 1/2 cup all-purpose flour
- 4 cups chicken or turkey broth
- Salt and pepper to taste
- 1 tablespoon soy sauce (optional)
- Fresh herbs (such as thyme or rosemary) for garnish
Instructions:
- Once the turkey is roasted, pour the drippings into a measuring cup and let it sit for a few minutes. The fat will rise to the top.
- Skim off about 1/2 cup of the fat (you can discard the remaining fat or save it for another recipe).
- In a saucepan over medium heat, combine the reserved fat with 1/2 cup of flour. Whisk constantly for about 2 minutes until the mixture becomes a light golden color — this is your roux.
- Slowly whisk in the broth, stirring continuously to prevent lumps. Bring the mixture to a simmer, allowing it to thicken for about 5-7 minutes.
- Add the drippings, salt, pepper, and soy sauce if using, to enhance the flavor. Stir well and continue to simmer until the gravy reaches your desired consistency.
- Finally, taste the gravy and adjust the seasoning if necessary. Garnish with fresh herbs before serving.
